No animals were hurt in the making of these brushes. The animal keeps producing hair, i.e., sheep continually providing wool. Many of the brushes are made from sheep's hair and I would think the same process would be used.

What brushes should I start with as a beginner?

If I had to recommend just two brushes for a beginner, they would be the Large Orchid Bamboo brush and a Detail brush. Another excellent brush that is used for creating texture is the Mountain Horse brush. Student grade materials are never a good idea and always a false economy. Besides, while they are wonderful, the Chinese brushes are not expensive compared to Western watercolor brushes.
