Not all the job are "dirty" the show is based on more out of the ordinary hard working jobs, but I'm sure you knew that didn't you.

All the dust you can see in the air makes it a dirty (as in hard on the lungs) job. I bet not many corn or wheat millers lived to old age without breathing problems.

@TFv052 They get paid for doing the show, so I'm sure it more then offsets the lost profits from his "mishaps/slow" work, since he's new and doesn't know what he's doing untl they run it through with him.
