Christmas Pudding Recipe from ANCHOR® Butter

Serves 4-6

Pudding ingredients:

•50g ANCHOR® Butter
•50g plain flour
•Half a teaspoon of mixed spice
•75g white breadcrumbs
•100g soft dark brown sugar
•150g sultanas
•75g Raisins
•50g Dates
•50g Cherries
•125g currants
•25g coarsely chopped peel
•grated rind and juice of half lemon
•2 eggs
•2 tablespoon treacle
•1 tablespoon golden syrup
•50ml Orange Juice
•50ml Apple Juice

Method:
Sieve all the dry ingredients together and mix well. Stir in all remaining ingredients until completely mixed. Lightly grease a half litre (1 pint) pudding basin and fill with the mixture. Cover with cling film and make a slit in the top to allow steam to escape. Cook on microwave high for 10 minutes. Allow to stand for 10 minutes after cooking. Sprinkle with brandy and serve.

  • Yes, this lady is quite a treasure. And being the first TV cook is something to be proud of. But honestly, you can't call this a Christmas pudding by a long shot. No suet? And it's looks like a wet slimy blob. A real pudding, like a good fruitcake needs to be steamed or baked {fruitcake} slowly then allowed to ripen for a few weeks or more. There are something's you just don't try and tinker with. If it ain't broke don't fix it!

  • My family LOVES Dickens "A Christmas Carol"...always wanted to try some Christmas pudding like the Cratchit's...the wife and I decided to try this easy method...we substituted REAL Vermont Maple Syrup for the treacle/molasses....it turned out GREAT!!!

    Lovely lady...awesome new tradition for our family!!

  • This looks like a very nice pudding,I shall try this one ,since i never had much luck with the traditional way of making it, plus too much work involved in the old method.Molassis is very close to Treacle in the UK.Thanks for the video here. :)

  • This pudding traditionally takes 13 hours to cook and is made one year in advance. It needs to be kept to bring out the flavours and if you don't have a cool dry place to keep it then just freeze it. The Victorians didn't have sell-by-dates and microwaves they just used quality organic ingredients; butter, sugar, bread, dried fruit and alcohol and it kept perfectly. Sweet lady but I prefer the traditional ingredients and the old way of making this classic. I presume this is a butter ad.
