Queperknuckle, the rooms (in this case they look more like adjustable partitions) help isolate the sound for a better quality recording of each instrument. Its helps to have individual environments for each instrument so you can tweak the mix the way you want it once the track is layed down. I can't see the piano player, but looks like they are recording together live in a semi - open air environment so they can capture some of that "live room" sound as well.
