Hi, I'd tried alot of curry fishball in hongkong... I planning to open a foodstall , can you teach me hw to prepare the sate sauce or soup , like those being sold in mongkok, they have 2 divider, one for curry fishball, one w/o .. do they use chicken broth cubes in preparing ....i would appreciate it very much....

but can i ask you why there is a pan of water underneath the grill? Does it help the food cook faster?

@cozycushins Hi, not cook faster. This helps the food not dry out and also the marinade will not drop on the hot coals, less smoke and the food will not be burnt . Have a great day :-)
