We are all too familiar with inflammation when it comes to an acute injury such as a sprain. Wait one minute... did this guy just say that poly-unsaturated fats are inflammatory!?! Are you kidding me? I have extensively studied the concept of inflammation and reducing inflammation... Omega 3's (EPA/DHA) are polyunsaturated fats and in conjunction with Omega 6 GLA, produce Prostagladins E1 and E3 - which are ANTI-INFLAMMORTY. Prostagladins E2 are PROFLAMMATORY, and can be controlled via the inclusion of GLA in the diet (to prevent the metabolic pathway of AA into PEG2).

You are basically correct. However you over looked the fact that the standard american diet provides 3 to 4 times more proinflammatory omega 6. As a result our way of eating has become very inflammatory.

I didn' undersand everything, but this: vegetable oil is pro-inlammery!
So I understand, why I got arthrose.
Could you tell something about: the effect of sugar?

Yes, Vegetable is pro inflammatory. Yes, Butter, Coconut Oil, and Olive Oil are all better choices.
