It's because the cells inside the battery casing are no longer separated by a dielectric film. This allows the acids inside to essentially run amok and catch the battery on fire. It's a bit more complex than that, but that's essentially what's going on.
Dropping a battery can break cells inside, and cause thermal runaway. Hitting it with a bullet simulates the same idea, although in a different execution.

I dun see the relationship between shooting the battery with a gun proving it more stable and reliable from the fact that most of the battery fail and explode DURING charging and discharging...
