    Great thorough work yet again Jeff! Sicilian pizza originates from "sfincione" (sfinciunn' in Sicilian) and is a very common street food in Sicily, particularly Palermo. The word "sfincione" comes from the Latin and Arabic words for "sponge" and it's commonly consumed topped with caciocavallo, caramelized onions, and salt, sometimes with tomatoes. I remember my uncles telling me how the Sicilian families used to sell it for 5¢/slice out of their cellars on Elizabeth St. in NYC's Little Italy..

    Brilliant, thanx for the video. Now I don't have to explain to people in Cape Town the different styles of pizza, I can just send them here. In Cape Town, St Louis pizza is the preferred style of premium pizza to the Capetonian palate... so trying to explain that there are thicker crusts that are good because they are airy and not simply heavy is hard work.
