奶油鮭魚義大利麵

詹姆士教你做

食材:
義大利麵條1小把、蘑菇8朵(切片)、洋蔥半顆(切絲)、新鮮鮭魚1塊(去皮)、菠菜1把、新鮮巴西里末、奶油半條、白酒1杯、雞蛋1顆(只取蛋黃)、橄欖油

調味料:
鮮奶油、帕馬森起司

做法
1. 起滾水鍋,加入3匙鹽,放入義大利麵煮熟備用。
2. 起乾鍋,放入鮭魚煎香,煎香後加入適量麵湯及少許白酒小滾,後將魚肉取出剔骨壓碎,魚湯保留備用。
3. 起鍋,放入奶油1/4條,倒入適量橄欖油爆香洋蔥,接著放入2湯匙麵湯、適量魚湯及義大利麵混合拌勻。
4. 同步驟1滾水鍋,汆燙菠菜,再加入少許白酒一起煮滾,撈起切細末備用。
5. 同步驟3鍋,放入菠菜末、洋菇、適量鮮奶油、鮭魚肉碎拌勻後關火,放入蛋黃後盛起,灑上起司粉、巴西里末即完成。

小叮嚀:
如果味道已經足夠, 雞高湯可視情況加入!
