Keith is a rather avant-garde player, often going on interesting tangents like he does here, playing a couple of classical tunes that feature scales. The second of these takes a while to get to the part with the scales. When he rehearsed this performance in a small set earlier that day, he announced, "You'll see what I'm getting at in a bit..." and finally, "There it is!" when the scales finally came.

No ragtime pianist worth his salt plays exactly as on the sheet music. Nor do (or did) ragtime composers expect them to.
