Hey, I'm a model sailplane soarer. Is it ok to fly model aircrafts on the shore slopes, and is there certain spots where you can actually be on top of the slopes(on the grass), I'v seen some vids where people launch at top.

No you don't. You do need to be aware of the local rules.
Most importantly are the right of way rules, which are similar to flying along cliffs.
Secondly, you're not allowed to walk over the dunes. You have to start at the bottom where there's no grass.
And lastly, don't hang around the launch once you're airborne. Give others the space to launch.
