Hey I just had these for the first time not too long ago too! I sliced them (about 1/2" thick), tossed them in olive oil, sprinkled them with salt/pepper, and baked them on a cookie sheet for about 10 minutes (or until soft) at 400*F. Definitely more artichoke-y that way! Delicious...

Chop them into small pieces & fry them - very good. Better than fried potatoes.
(But get ready for the gas that they will produce in your intestines!)
