On our latest Bavaria/Austria trip we saw again some inspirational dairies and Wilder Kaser in Kirchdorf, Tirol in Austria must be one of the most exciting ones. Herr Widauer and his wife run an amazing enterprise. Herr Widauer transfers by himself 1,500 liter milk into soft cheese in one of the most smooth operations ever. A vat with curd is emptied by gravity into block moulds which are turned in a multi mould turner. The cheeses end up as soft white and washed rind. A video presentation explains the making of the cheese and a selection of cheeses and other local products are sold in the shop and there is also an opportunity to order a light refreshment.
