Scrambled Tofu with caramelised onion, basil, chives and crushed tomatoes.
Served on Sour dough toast accompanied with oven roasted tomatoes, sauté spinach and mushrooms. (Serves 2).

Ingredients:
250gms firm tofu (crushed),
2 onions finely sliced,
½ bunch basil,
¼ bunch chives (chopped),
½ cup crushed tomatoes,
1 tbls crushed garlic,
1 cup soy milk,
salt,
pepper,
2 tomatoes,
4 slices of bread (any kind),
5 large Field mushrooms sliced,
75gms baby spinach,
Olive oil

Method:
Slice tomatoes in half and place on a tray with a drizzle of olive oil and salt. Put into a preheated oven of 180 C° and cook for 1 hour.

Caramelise onions in a pan with some olive oil until the onions are golden brown and cooked thoroughly.

Combine crushed firm tofu, chopped basil and chives, crushed tomatoes, garlic, soy milk and caramelised onions in a pan and bring to the boil. Reduce the heat and simmer until the tofu resembles a thick scramble. Add salt to taste.

In another pan, heat the olive oil on a high heat and add the sliced mushrooms. Sauté until golden brown, then season with salt and pepper.

Assemble the toasted bread on a plate; topped with the tofu scramble, and the sautéed mushrooms, oven roasted tomatoes and then lastly the sautéed spinach which only takes 30 seconds using the same pan from the mushrooms.

  • @forevermuddledme She said Napoli Sauce.  Do a Google search for "Napoli Sauce Recipe" and you will find it.

  • i tried this for breakfast at home and it was fab!! thanks so much! only thing is, i had to replace the sauce you put into the 'scrambled eggs' with something else, what was that sauce you put in, i have never heard of it before.
