Nancy's weakness is she would always "pose" before doing any of her moves so there is always a 1 sec delay before she starts to hit you. Different moves have different starting poses. Learn to identify all of them so as to block/sidestep/jump when needed to avoid getting hit.
There is no use trying to sidestep and get behind her as she turns around pretty quickly. Just keep spaming f+1+2 and her charge up skill d/f+1+2. The bonus gold is quite attractive to win.
