nice video. i enjoyed this because i made bertinet's sourdough today. but shame you did not show any of the crumb in your video...! that's the best bit!
the base of my bread was not as dark as his in the book. and i noticed that yours was quite pale too in comparison with his.
i'm curious- how is the tray baked one different to the stone baked one?
