if you mean maneuverable in terms of roll, then the 190 series is amazingly good, but like the previous poster, its bleed energy in turns easily. The LA-7 is probably what I would use for these kind of races, especially since it has WEP, is super light and regains speed quickly, and is blazingly flast while being maneuverable. The yak has great high speed handling.
In these kinds of races where firepower is not important (russian planes have crappy guns and firepower) the YAK/LA-7 are great.

Fw190 loses the enegrie while manuvering lot faster the Yak or MiG-UD, Im sure LAGG behavior is also better

The old double deckers in the game are quite slow but very manouverable. I think the Spitfire Mk IX Clipped Wing would be good in that...
