If I don't have a dehydrator or access to one what should I use for almonds? Could roasting or smoking them achieve the same ends?

@MrsVfly Depending upon the type of nut, they go for different time frames. Most, like walnuts, pecans and almonds can go overnight (8-12 hours) with soaking and then until dry in the dehydrator- will vary based on your dehydrator- and the temp chosen. I usually go for around 110-115 degrees. Cashews soak a shorter time and usually are dried at higher temps (like in a low oven around 200 instead of a dehydrator) until dry and crispy. Let that be your guide- dry, crispy nuts not soggy.

you dropped a nut @ 3:55,it fell behind the dresser
and this doesn't happen when the nuts are being processed?

@HillcrestCapital No, unfortunately not. Most commercially roasted nuts are drenched in rancid, industrial vegetable oils (soybean, canola, cottonseed, etc) and roasted at high temps and thus are not healthy. Buy RAW nuts to start, and then soak and dry them until crispy. You will have a more easily digestible and healthy food.

Where did you purchase your glass jars? Are they safe from leaching any toxins as with some glassware ?

@ElderIvoryWilliams I have found glassware to be safe, even with acidic foods. I use regular mason jars for storing food, generally, and Anchor Hocking brand glass bowls more often than not. Pyrex is ok, but Anchor Hocking is US based, so I tend to favor them.

What if you want to store them in the shell? do you soak them in the shell before dehydrating or do you soak them after you've dehydrated them and are ready to eat them?

@oveid Store in the shell and then remove, soak, dry and eat :) They can be stored AFTER soaking (obviously not in the shell) for quite some time, but in the fridge or freezer.
