    The porchetta sandwiches pretty much always are built with chunky strips of porchetta. No idea how you got paper thin ones.

    Protip for people checking this place out: you can ask for extra crackling in your porchetta sandwich. Goddamn delicious.

    Maybe you got there towards the end of the meat slab and they didn't have quite enough for a loaded sandwich. I was there a couple of weeks ago and the sandwiches I got were so good I got two more for the road, maybe you just had bad luck.

    Just bought a Porchetta...certainly not CHUNKS, more like paper thin slices... pretty disappointing after watching this video ... I went in thinking that I would get the sandwich at 1:00 ... very thinly sliced... parsimonious rather than fully loaded...Guy gets the big sandwich at 4:35 ... Has anyone else got this serving?

    yes theres benefits using kosher salt. do you know theres lots types of salts? should google it; it'll tell you all the salts, and differances in them. very interesting. worse salt to use, and should avoid cooking with, is table salt.

    Kosher salt is salt that has no preservatives, additives, or free flow agents to it. It's not specifically used to draw out the blood. Any type of salt can do that. It's just what the Jews happend to use. I use kosher salt. May as well. It's the same as iodized except more pure
