This is so cool! I followed you here from thefreshloaf. I recently discovered that site yesterday and have been happily reading all your posts on onion rolls and now this. I wished you lived nearby so I could pick your brains and pester you everyday;-) Thanks for sharing all your baking recipes and techniques.
Technique like this is a lost art and it would take longer than 2.5 min. to do it justice. Have watched this video a hundred times and am still "practicing". Right now only one in six rolls is good enough to rate a D+.
At 56 years old I remember having Kaiser rolls with my grandfather in Brooklyn, NY. Real Kaiser rolls ar an art and it is almost impossible to find anyone who will make them the right way.
I am in the Philippines now and am wondering if I can make them here as everything takes longer to bake. Also, do you use a stone insert in your oven to get the rolls really crunchy?
