Life, Liberty and Pursuit of Cheese - Zabar's Cheese Plate of the Week 45

Our forefathers probably had no idea that when they wrote the Declaration of Independence and created the United States of America that over two hundred years later, one of the groups that would thriving thanks to their decisions would be the American cheesemakers. Indeed, the American Artisan Cheese industry has grown leaps and bounds, especially in the last ten years, to include well over 1,300 cheeses. Producing such a wide variety of cheeses from Camembert to Cheddar to sheep's milk tomme to fresh goat cheese layered in every herb imaginable to stunning and truly unique blue cheese, these artisans would have made our forefathers very proud. So, we can think of no better way to enjoy the founding of this country than with some great American cheeses.
