Ok sooo...here we go. I'm not big on following rules so I switch things up. Instead of the oven, I use my electric skillet set at 300*. And for colored fortune cookies I use colored crystal sugars like the ones you sprinkle on cupcakes. When using colored crystal sugars adjust the sugar amounts. Half white,half colored.(recipe calls for 8TBS of sugar, so that would be 4TBS white and 4TBS colored crystal sugar)
What you'll need:
2 large egg whites
1/2 tsp vanilla extract
1/2 tsp almond extract
3 TBS veg oil
8 TBS flour
1 1/2 tsp cornstarch
1/4 tsp salt
8 TBS sugar
1/2 cup water (set aside)

-beat eggs whites, vanilla, almond and veg oil until frothy but not stiff.

-add flour, sugar, salt and cornstarch into a separate bowl.

-stir flour mixture into egg white mixture. Then add TBS of water until it is the consistency of pepto bismol...LOL!!!

-heat electric stillet to 300*. once heated drop 1 TBS onto skillet and smooth around to about 3 inches. Heat on each side about 30 to 40 seconds. Once heated on both side take off...fold in half then grab sides and fold over coffee mug. Place in muffin pan to cool to cold shape. If they don't end up crunchy enough place the cookies (still in muffin pan) into the over for 5-7 minutes longer.

*IT IS KEY TO ONLY DO 1 COOKIE AT A TIME!!! If you do not fold them right away they will crack!!!
