is it not necessary to put the tomatoes in an ice bath immediately after boiling?

@aarossell yes you need to cool them down ..cool bath or set aside for some seconds,both helps

I was trying to make a classic italian tomato sauce form scratch with just tomatoes..I guess I should've pureed them..b/c although it tasted great, but the appearance was misleading..it wasn't that classic vibrant red colour that tomato sauce should have, and I had to add corn starch just to make the sauce thicken...I guess I should've picked more the seeds and white parts of the tomato off before cooking...

@mrrawrlicious yes if u use the inside portion n seeds it will be less of red
