So what you are saying here is that all other Prosciutto on earth have nitrates/nitrites? Most Prosciutto is Nitrite/Nitrate free. It is cured with salt and time only. Your statement is very misleading.

Whole foods is just silly, and ohhh arn't we all so advanced for being RICH and refined. NYC says, we're not so well-to-do and I'll teach them how to make good food for less. Oh, they (NYC) also hates me for not being pretentious, even if I live there. $7 instead of $45 for 6, who needs it............Sorry folks, I too love West Side Market......
