These are makiwara, wet rolls of soft rush straw mat. Some say makiwara closely simulates the strength of human body, like ballistic gelatin, but I don't know it's true or not 'cause I've never cut any human.

can someone explain the resistance factor and strength the objects the guy was cutting so I can better understand why they use them?

Could you disclose who made your katana or where exactly did you buy that extremely resistant blade??

Maybe he didn't stop the blade right but the second cut was better than the first one.
