I've read you shouldn't stir it so much, and the sugar should go in first, then water, then the coffee on top. Stirring it up so much seems more like Greek coffee.

You're wrong, make sure you use only Pure arabica 100%

you can use any coffee you want as long is it is not robusta, low quality coffee, used by ganule makers mostly, you can not find it India anyway I guess.
