Usually, fill up the mate again and again going through the whole thermo. By that time you might have to reload your mate due to the yerba going lavado (flat tasting). Add various herbs such as: ginger, stevia, chamomile, etc. Sweeten with raw cane, honey, or agave nectar for mate dulce. I prefer it plain, amargo (bitter). Peace&Grace.

What I learned in Cordoba was that primarily in Salta/Jujuy, they use orange juice. Cordoba, they usually just make traditional mate. It gets very hot, and they say to drink it hot. You do bring up a good point about the immigrants, seeing that Argentina has a lot of European immigrants, especially from Italy. I've never been to Paraguay but I also have been to Chile. When I had it in Cordoba, I always put in yuyos, which worked well with the mate. Since I'm back in NY, I have limited yerba.
