okay....if you are going to put them in the oven anyway, turn the heat up on the stove so you can get a better crust on the outside of the cake.
rule of thumb with pan frying, hotter the fire, faster and crisper the outside cooks, lower the fire and it heats evenly through but you lose the crispness of the outside.
i cook them, by first mixing the stuff together and putting it in the fridge to cool, just as you did, coat them in break crumbs with an egg medium, and deep fry them.

the pan is way tooooooooooo cold! you r boiling the crab cake instead of browning them! OMG, what a waste of produce.
