the reason why we don't used glove in france or everywere in the world for that meal is the iron plate is too much hot for used glove it's more than 300 degres celcius, the bacteria cannot live in those condition and your hand too.
When i am going to japan the girl who make okonomiyaki didn't have a glove to for preparing the meal, it's too dangerous if you used platic glove on a tepan yaki.

if you all actually paid attention, after he takes the money he uses a spot of hand sanitiser. Then he wraps up the crepe. It's quick but still noticable
