where possible i also use fresh tomato in my sauce. its more tangy in flavor and does not have the metallic taste of canned tomatoes. i add a tablespoon of sugar not so much for sweetness but to chemically make the taste bud receptors more active and thus act as a flavor enhancer sounds like bullshit but its food science.
I agree with ck360. If you have the time and the fresh tomatoes let them sit awhile after you pick them about 3-5 days and they will become naturally sweet.
I will definitely include this in our culinary experience this summer at the Floon athenaeum in Brooklyn. Depending on enrollment/budget, we may include Mia Dona, as part of our dining experience.

The only problem with this is that is alot cheaper to buy a ready made tomato sauce than to buy all these ingreadients seperately IMO.
