Now we take the grapes and run them through the wine press to remove the skins and seeds and create free-run juice, this term is called pressing.
Historically, wine presses were made of wood and operated manually and the winemaker could control the amount of pressure on the grapes with relative force of the plates within the wine press.
Today, winemakers use mechanical presses that emulate the gentle process of the old-style wooden press. From here, the wine goes to tank and secondary fermentation and bulk aging begins.
