Green eggs and ham are a fun way to celebrate Dr. Seuss' birthday. Find more fun, kids recipes like this one at http://www.TheIronChefMom.com.

I'm Stephanie Gallagher, the Iron Chef mom, and today, we're making this green eggs and ham recipe.

For this recipe, you'll need:

4 large eggs
2-4 Tbsp. chopped pancetta
2 Tbsp. mayonnaise or sour cream
1 tsp. rice vinegar
1-4 dashes of hot sauce
1/2 cup prepared pesto

Place the eggs in a saucepan and cover with water to about an inch over the eggs.

Partially cover the eggs and bring to a boil. Let the eggs boil for exactly 30 seconds -- time it -- then cover and immediately remove format the heat. Let the eggs stand covered for 14 minutes.

Meanwhile, place the pancetta in a small skillet and cook over medium heat until it's crisp.

Now drain the eggs under cold running water. Crack each egg on the side of the pot and peel it under the running water.

Slice the eggs in half lengthwise, and scoop out the yolks into a bowl.

Add the mayonnaise, rice vinegar, pancetta and hot sauce to the bowl. And a little salt would be a good idea. Now mix it all together.

Now you can either spoon the deviled egg mixture into the egg white shells or use a homemade pastry bag. I just take a gallon size plastic bag and fold it down over one hand, like this.

Spoon the egg yolk mixture into the bag, pressing it down to one corner, and snip off the tip of the bag with kitchen shears. Now you can pipe the deviled egg yolk mixture into the egg white shells.

Now spoon a little pesto over the deviled eggs, and here are your green eggs and ham.
