Chef Ron shows how to make delicious homemade Carrot Soup with tasty spices. Produced by Carole Anne (Babers201 on YT) and edited by paulgrem.

1/4 cup (1/2 stick) butter
1-1/2 cups chopped onion
1 Tablespoon chopped fresh ginger, finely chopped
1-1/2 teaspoons minced fresh garlic
2 tomatoes, seeded and chopped-about 3 cups
1-1/4 pounds of carrots, peeled and chopped-about 3 cups
1-1/2 teaspoons grated lemon peel
3 Cups of chicken stock, maybe more if want
1 cup to 1 can of coconut milk
2 Tablespoons fresh lemon juice

Melt butter in large pot over medium-high heat. Add onion; saute 4 minutes. Add ginger and garlic; saute 2 minutes. Add chopped carrots, tomatoes, and lemon peel; saute 1 minute. Add 3 Cups of stock and bring to boil. Reduce heat, cover partially and simmer until carrots are really tender, about 25 minutes. Cool slightly.

Puree soup in batches in a blender. Return pureed soup to pot. Mix in lemon juice. Mix in Coconut milk to desired consistency. Season with salt and pepper. (It can be made a day ahead-cover and chill.)

Serve cold or hot.

For hot, bring soup to simmer, thin with more stock or coconut milk if desired. Ladle into bowls and top with grated carrots, or cilantro, or even a dollop of sour cream/yogurt. Your pick!
