Atlantis

On July 8th, 2011, Space Shuttle Atlantis launched for the last time, bringing an end to NASA's space shuttle program after more than thirty years.

I don't think they sink; I think they are just submerged briefly due to the force of them hitting the ocean. But I can't say for sure. NASA does recover the solid rocket boosters, though. For Atlantis, they had two ships out at the estimated drop point to tow the boosters back in.
