@HASCHELCRIS: They do that by themselves in the nature! When they arrive on the field in spring, they all fight to know who's the stronger. Then they know that and they don't fight anymore. People just decided to bring them in a pitch, so everybody can see that hierarchy fight without going on the mountain. That's it! Cows are never injured during the fights. There are not at all fights organized by men. They do it alone! ^^
They are females and the cow who win the fight is called the "queen".

@musikus48 : Ja sie sind Weibchen. ;-) Sie machen immer so in der Natur, um zu wissen welche "die Königin der Alp" ist. Sie kämpfen alle einmal gegeneinander und wenn eine verloren hat, akzeptiert sie die andere als Königin und sie kampfen nicht mehr. Das ist nur am Anfang des Saison, dann ist die Alp ruhig während des Sommers, weil sie alle wissen welche die Cheffin ist.
Sie sind Kühe von Hérens, in Wallis (Schweiz).

It is a traditionnal fight between cows in the valley of Wallis Switzerland. The purpose is to have a hierarchy between them in order not to fight later in the mountains.The winner is called Queen of the year.
