Jump on the Samoan time machine and watch as a few neighbors help prepare a delicious meal of taro, breadfruit, coconut cream, potatoes, chicken and tuna in a giant fire pit as Samoans have for thousands of years. But no, Samoans don't make smores.

  • The time taken to wait for the fa'apusa to be ready for the pre-cooked food. The placement of meatier food, ie, pig, in the centre or where there are more heat in the umu, then smaller foodstuff, fai'ai 'ia, filaui'a, etc palusami etc, then the kauvela on top. The length of time for the cooking process and the the finishing process of removing of the kauvela and the cooked food for us to see. I have lived in Samoa in 1988-89 and I had had plenty of experience with making umus.

  • Not bad, except you have cut a lot of the process. Within Australia we are curious to find out the complete process. You illustrated the palusami process, and the prep of the plantain (green bananas). You must do your illustrative video justice by starting from the beginning, selection of fafie, papupuni, the tools ie tongs, kauvela, types of leaves to be used ie banana leaves and breadfruit leaves etc. Types of rocks to be used not aluvial rocks, which often cracks & splinters in the heat.
