Since the empty can was heated up, lots of heat energy was trapped inside of it, so once you put it in cold water, the heat enery/air escapes very quickly and it's so strong that it crushes the can.
nice video, we did this a whole bunch in my science class. we also did it with a big 50 gallon oil drum and a big propane stove. for all of yall wondering how it's done, you boil water in the can for a while, so that the can is filled with water vapor. when you turn it over in the cold water, the hot water vapor in the can condenses into liquid water, which takes up MUCH less volume, and since no air can get in the can, it gets crushed.

we did this in science class (chemistry) using a huge 10 gallon can, with some chemicals...it was sweet...
