This is a help video on how to record your desktop and record your default audio in/out.
This has been tested on 11.04 , 10.10 , 10.04 , 9.04
I will test on 11.10 in a bit once i do a fresh install
there are some graphical glitches i think this is because i am on a nforce and the drivers are horrible.
command is

ffmpeg -f alsa -ar 48000 -i pulse -f x11grab -s 1360x768 -y -r 32 -i :0.0 -s 1360x768 -r 32 -sameq videoout.avi -y

You can change the .avi to any supported format but i like avi as its supported by youtube. you should also move/rename your files after recording so you do not over wright them.
