1. half and half or cream won't work.
2. how do you get less thick milk? mine gets way too thick, and really makes latte art virtually unachievable. I've done rosseta's and heart's before, how do I get the milk right to do the pour well

1. I'm not sure what "won't work" means. Most espresso machines with a decent amount of steam will still be able to texture milk with cream in it... It won't foam as much, but it'll definitely do something. Latte art aside.
2. You're probably stretching too much. Don't leave the steam tip at the surface of the milk for too long. Stretch immediately for a short time and then drop the tip into the milk and spin until it gets hot enough.
