Shrimp with Lobster Sauce. Chef Remy has simplified this favorite Chinese dish found in all Chinese restaurants across our country. You will be able to duplicate taste and texture with ease in your own kitchen. Lobster sauce is not made with lobster but is called Lobster Sauce because it is usually made for a steamed lobster meat dish. It is also called Cantonese Sauce. Try to refrain from adding any more veggies (other than green peas) to this wonderful Chinese dish.
INGREDIENTS: 1 lb. fresh or frozen, shelled, cooked or uncooked shrimp, thawed - 2 oz. minced pork - 2 Tbsp. minced ginger - 1 Tbsp. minced garlic plus 1 Tbsp. minced garlic - 1/2 cup scallions, cut up - 1/2 cup carrots, cut up very, very thin - 1/2 cup frozen green peas (optional) - 1/2 cup sliced water chestnuts - 4 oz. can sliced mushrooms - 1/2 to 3/4 cup water - 2 Tbsp. peanut oil plus 2 Tbsp. peanut oil - 1/2 tsp. sugar - 2 Tbsp. dry sherry - 2 tsp. corn starch - 1tsp. soy sauce - 2 eggs very slightly beaten.
METHOD: Prepare pork mixture by adding sherry, soy sauce, and sugar. Set aside. Prepare cornstarch mixture by adding water, salt, and pepper. Prepare veggie mixture in one bowl with water chestnuts, mushrooms, peas, and carrots.
Heat oil in wok. Stir-fry ginger and garlic for 30 seconds then add shrimp. If fresh, cook until pink (about 2 minutes). If using thawed, cooked shrimp, stir-fry to heat up then remove all from pan. Set aside, keep warm.
Heat oil in wok. Quick-fry garlic and scallions. Add pork mixture and cook 10 minutes until completely done. Add veggie mixture, continue to stir-fry for three minutes. Add cornstarch mixture and whisk to thicken the sauce. Add egg and swirl slowly to thread it throughout the sauce. Return shrimp to sauce. Serve hot with white rice.

  • It's a whole lot better to cook with real dry sherry, the kind you drink. Cooking Sherry has too much salt in it. Try drinking cooking sherry and you'll spit it out. Drinking wines must always be used. People buy cooking wines because they are readily available in the food section in small quantities and their husbands and kids won't drink them.
