@JereQuli: I guess you mean, why the EVA's have flesh? It's simply because they are humanoid beings. It would be wrong to even call them robots, because they clearly are cyborgs. The plates and amor that cover their body is only to keep them under control and use their powers. Beneath the plates the EVA's have flesh, eyes, teeth and even organs, just like a normal human.
