I have made this dish at least a dozen times and it's always a showstopper. I like to add kasoori methi if I don't have curry leaves on hand. It's also good with a little coconut.

Another simple yet delicious variation of making pumpkin is
In a pan add oil, cumin , greenchillies, and curry leaves and onion. Saute onion slight golden brown and then add turmeric . Mix and then add pumpkin and cook with lid on till 95% done and then add the grated coconut to it and cook for rest 5% done with lid on and granish with corriander. It takes only 10 mins to make this dish max.
