well touching the string softly is basically a natural harmonic hes doing pick harmonics which are artificial harmonics. to do a pick harmonic you pick the note you want to squeal and you pick but at the same time you use your thumb to scrape the string but you dont cover the string to much otherwise you just mute it out fully.

@m3ssdown The "screeching sound" is called harmonics (aka squealies). You produce it by softly touching the string at the same time you pick it. There are a lot of tutorials around on youtube to help You more than i did.
