This was one of those bosses that was frustratingly difficult for me, but once I beat him for the first time he was a cakewalk every single time I fought him again.

I like that combo you've got working for you. Jump-slash, then slash again. To be fair, that's how I beat Goro in Mortal Kombat, so I guess it's a tried-and-tested method.
