• 15g butter
• 1 tbsp olive oil
• 3 cloves of garlic, peeled and crushed
• 2 red chillies, deseeded and diced
• 1 kg fresh mussels, cleaned
• 150ml white wine
• 6 tbsp fresh living parsley, chopped
