Try to use clarified butter if possible, it won't give that burnt brown taste from cooking the butter potatoes to long. Or Cook with canola oil then you can add butter last 5 minutes of cooking.

@keithsnow actually, it's exactly a potato pancake! a latke more specifically would use a bit of matzo meal and a little bit of egg. it doesn't taste like either extra ingredient, it's just enough to barely hold it together.

i dont care about the appearance of food but some times order in cooking and shape will mean thing cook evenly and without a mess, this is definately 1 of those things, just crack and egg in th mixture and squeeze them in to a flat pattie and cook you'll gt the lovely rown crisp and a tiny layer of song potato inside, theres nothing like real chips or fries,

Great video man.
My suggestion is to add an egg and some flour into the potatoes, that will make them have a defined shape and will keep them together in little pancakes. This was more of a fried grated potato in my opinion.

what happens if the potatoes turn brown before you put them on the skillet?

not much..they just look a little different...truth be told, is you use russets, they will turn much quicker than a yukon gold or yellow potato...brown is just oxidation..wont hurt you
