I personally like to destroy my steak. I'm not a fan of steak unless it's completely cooked through - lean, tough (without being stringy) and with a dark, dark brown/black crust. Somewhat burned on the outside, but not completely, because eating bits of charcoal isn't for me. Then I have tomato sauce on the side. So many people have been offended when I ask for my meat that way, but it's just how I like it! Beef isn't amazing to me unless it's like that.

tincey bit rare fer me....there is a fine line between raw,cool,jiggly meat and medium rare deliciousness..hard to nail down...but when you or your chef does......mmmmmmmmmmmmmm. my wife likes it WELL WELL done....I say to dry...she says thats what butter is for.. yes dear :)
