ConstructionOfficeOnline has posted several videos about how to work with a construction schedule using Excel. Including how to add calendar days to the schedule. Search ConstructionOfficeOnline and look for "How Dates Work ...."

Interesting but how do you deal with multiple homes (e.g. an entire subdivision under construction?)

Two ways but first I would recommend using Excel 2007.
1. You can list multiple homes in one spreadsheet using links to take you directly to the property you are watching. Using this method, I would create an Index sheet listing all the houses (Projects) you are managing then create a link for each one to go directly to the point in the schedule sheet.
2. Create a new schedule per project. (Simple)
