Humans have different digestive processes. It doesn't matter what is available, it depends on what the human digestive system absorbs more easily. It's nice to think every mammal is the same, but they are not. Even on an individual basis, people digest things differently. Animal example, Cows. People example, Thyroid issues or IBS.

I agree with you that absorbability is a factor indeed. Bioavailability is as well. They are both important.

I don't understand how you can say "it doesn't matter what is available" as what if NOTHING is available to absorb?

That makes no sense...

Clearly, both are important.

I also agree with you that every mammal is different, and every person is different.

I was talking about spinach and you were talking about all the animals cooking all of their greens.

I never said, what if nothing was availlable? because that would be weird, you might as well eat plastic or corn. By 'It doesn't matter what is available', I meant, in Spinach, it is inconsequential what vitamins are available to you raw or cooked, it digests better and brings out more essential nutrients if it is warmed.

I am only talking about spinach, your scope is broad. I love you.
