Why not just use a china cap lined with cheesecloth to collect the curd? Seems like straining by hand is letting product escape. Yeah, it's only a little bit, but still. Cheesecloth and strainer just seems easier and less mess.
Otherwise, great vid and nice info. One thing: I assume the microwaving is to lightly heat the curd up to draw out extra whey and firm up the curd to proper consistency. Could you do the same with an oven on low heat or using a double boiler?
